“Caseum Diem — Cheese the Day”
We offer an exceptional table of small-batch cheeses made by us and several other cheesemakers. All the milk comes from small, sustainable family farms in cooperatives, some fourth and fifth generation, and is hormone free. The cheese is truly wonderful: from 8 year old cheddar to raw milk aged gouda; from hard Italian style cheese soaked in raspberry ale to triple crème brie layered in blue; from fresh hand-milled garlic ‘n’ dill cheese curds to applewood smoked string cheese. It is our goal to send every customer home in yummy cheese shock!
